Kooper Family Rye Collaboration Dinner at Cannon + Belle
Cannon + Belle will host its first collaboration dinner of the fall with Texas-based Kooper Family Whiskey Company. Chef Yesi Arredondo has a developed a four-course meal to pair with cocktails created with Kooper Family Rye from the award-winning distillery. Founders Troy and Michelle Kooper will be at the dinner to discuss the company’s history and distilling process. Founded in 2012 and based in Fayette County, Kooper Family Whiskey Company crafts three rye whiskies including a Kooper Family Barrel Reserve Rye.
First course: Soy-cured egg yolk with sweet potato and a whiskey jus; Paired with Autumn Dusk featuring Kooper Rye, Averna liqueur, honeysuckle and maple bitters
Second course: Wagyu brisket with a side of white asparagus, black garlic and rye-moked ramp topped with a horseradish béarnaise sauce; Paired with Sazerac Rift containing Kooper Rye, brandy, green Chartreuse, cherry bitters, orange blossom, bitter almond, garnished with an orange blossom ice cube
Third course: Lamb accompanied with artichokes and goat's curd alongside a pork cheek and bacon jam, apple caramel and Kooper Rye dressing; Paired with BOLD Fashioned featuring Kooper Rye, Nitro cold brew coffee, cinnamon simple syrup, Angostura bitters and caramel air
Fourth course: Whiskey and dark chocolate cheesecake with a rye crust, fig ice cream and balsamic two ways; Paired with Kooper’s Silk consisting of Kooper Rye, grapefruit, Aperol, vanilla simple syrup, lemon, saffron honey vanilla bitters and chocolate shavings
